Tuesday Group Lunch Featured Recipe: Ikarian Stuffed Eggplant

We’re growing eggplant in our garden this year. When I brought this up at work, two of our team said they had never tasted eggplant before, so I tried an Ikarian eggplant recipe I’ve had my eye on. It was simple to make and got great reviews! It’s also easy to add a protein to, like Italian sausage.
